Ingredients

For the asparagus salad

  • 2 tbsp olive oil, cold pressed
  • 2 tbsp lemon juice, freshly squeezed
  • 2 tbsp tamari (or soy sauce)
  • 1 tbsp yacon syrup
  • 1 tbsp almond butter, white
  • Crystal salt and pepper from the mill
  • 250 g green asparagus – cut off the ends and cut lengthways into thin strips with a vegetable peeler
  • 250 g white asparagus – peel first; thencut into long, thin strips (see above)
  • 3 tablespoons pine nuts – roast fat-free
  • 20 basil leaves – finely chop

Instructions

For this asparagus salad, we cut the asparagus into fine, very thin strips and added a spicy dressing – delicious!

Step 1

For the dressing , mix 2 tbsp olive oil, 2 tbsp lemon juice, 2 tbsp tamari, 1 tbsp yacon syrup and 1 tbsp almond butter in a salad bowl and season with salt and pepper .

Step 2

Add the asparagus strips to the dressing and mix well.

Then fold in 3 tablespoons of roasted pine nuts and 20 chopped basil leaves and season again.

Step 3

Arrange the asparagus salad on two plates and enjoy.
