Ingredients

For the broccoli salad

  • 500 g broccoli – remove the stalk and cut into very small florets (blanch for 1 min. if necessary)
  • 200g red peppers – core and cut into 1cm cubes
  • 150 g apple – core and cut into 2 cm cubes
  • 5 g finely chopped coriander (alternatively parsley)
  • Crystal salt and pepper from the mill
  • 40 g walnut halves – roast fat-free
  • ½ small onion – cut into very fine cubes
  • 1 bowl sprouts mix (garnish)

For the dressing

  • 2 ½ tbsp apple balsamic vinegar
  • 2 EL Sojadrink
  • 1 EL Yaconsirup
  • 1 tbsp lemon juice, freshly squeezed
  • 1 – 2 teaspoons mustard, medium hot
  • 5 tbsp olive oil, cold-pressed

Instructions

This fine broccoli salad is quick and easy to prepare. And since it tastes fantastic, you should definitely try it.

Step 1

First prepare the salad items.
Then place the broccoli, diced peppers and apples in a salad bowl,

Step 2

For the dressing , put all the ingredients – except the olive oil – in a tall container and puree until creamy with a hand blender; Meanwhile, slowly drizzle in 5 tbsp olive oil.

Step 3

Fold the chopped coriander into the salad and pour the dressing over it. Mix everything well and season with salt and pepper.

Step 4

Arrange the broccoli salad and serve sprinkled with the roasted walnutsdiced onions and the sprouts mix.
