Ingredients

For the kale salad

  • 100 g kale – remove the stalk and cut it into fine strips
  • 200 g carrots – peel and grate coarsely
  • 10 g pecan nuts and hazelnuts – roughly chop and briefly roast until free of fat

For the dressing

  • 1 avocado – pit and scoop out the flesh with a spoon
  • 3 tbsp olive oil, cold pressed
  • 4 tablespoons lime juice, freshly squeezed
  • 2 Tbsp mustard
  • 1 EL Tamari (Soy sauce)
  • 1 EL oats
  • Crystal salt and pepper from the mill

Instructions

This healthy kale salad will surprise you! Combined with carrots and nuts and provided with a fruity and spicy avocado dressing, it could will become your new favorite salad.

Step 1

For the kale salad, place the kale and carrots in a bowl.

Step 2

For the dressing, put all the ingredients in a tall bowl and puree with a hand blender. Season with salt and pepper.

Step 3

Pour the dressing over the vegetables, mix well and season again.

Step 4

Leave the kale salad to stand for approx. 15 minutes, then arrange on 2 plates and serve sprinkled with the nuts.
