Ingredients

For the leek vegetables:

  • 150g shiitake mushrooms
  • 2 tablespoons garlic, chopped
  • 350g leeks
  • 2 tbsp pine nuts
  • 2 tbsp peanut oil, heat resistant
  • 200ml of water
  • 2 tbsp tamari (soy sauce)
  • Crystal salt and pepper from the mill

Instructions

With this leek vegetable with shiitake, everything is just right. The spices used combine excellently with the leek and mushroom aromas and so a delicate dish is created in no time.

Step 1

Cut the shiitake mushrooms into strips; Finely chop 2 tablespoons of garlic; cut the leeks in half and cut diagonally into pieces of about 1 cm; Roast 2 tablespoons of pine nuts fat-free and set aside.

Step 2

Heat a pan with 2 tablespoons of peanut oil and fry the shiitake strips with the chopped garlic for approx. 3 mins. Then add the leek pieces and fry for 4 – 5 mins., stirring occasionally.

Deglaze with 200 ml of water and simmer until the leeks are cooked. Then season with 2 tablespoons of tamari, salt and pepper to taste; Serve sprinkled with the roasted pine nuts.

Tip: Potatoes, rice or patties are suitable as an accompaniment to leek vegetables.
