Ingredients

For the onion pie dough

  • 150 g wholemeal spelt flour + flour for dusting the work surface
  • 75 g spelt flour, light
  • 4 g of dry yeast
  • 3/4 teaspoon crystal salt
  • 1/2 teaspoon coconut blossom sugar
  • 120 ml water, lukewarm

For the topping

  • 650 g red onions – cut into rings
  • 200 g smoked tofu – cut into 5 mm cubes
  • 100 g leeks – cut into rings
  • 1 1/2 tablespoons chickpea flour
  • 1 1/2 tablespoons organic cornstarch
  • 200 ml soy cream
  • 3 tablespoons peanut oil, heat-resistant
  • 1 tbsp margarine, vegan + heat-resistant
  • 1 tbsp tamari (soy sauce)
  • 2 tbsp yeast flakes
  • 1 teaspoon smoked paprika powder
  • 1/2 teaspoon nutmeg powder
  • 1 tbsp finely chopped rosemary

Instructions

An onion pie that is able to inspire: spicy, moist and mega-delicious! You only need 20 minutes to prepare, then the dough has to rise before it is finally baked.

Step 1

For the onion pie batter, mix all the dry ingredients in a bowl, then add the water and knead with your hands to form a smooth dough. Cover the bowl and let the dough rest for 1 hour.

Step 2

In the meantime, mix the cream, chickpea flour, cornstarch, rosemary, yeast flakes, paprika, nutmeg and tamari in a bowl.

Step 3

Heat the peanut oil in a large pan and fry the tofu for 2 minutes. Then add the onions and leeks, sauté for 5 mins. and turn off the heat. Pour over the mixed cream, mix well, season with salt and pepper and set aside.

Step 4

5 minutes before the dough has finished resting, preheat the oven to 180 °C convection.

Step 5

Grease the baking pan with margarine and roll out the dough on a floured work surface about 3 mm thick and round. Line the mold with it, then put the filling in it, spread evenly and cut off the overlapping edge. Then bake in the oven for 30 minutes.

Step 6

Take the onion pie out of the oven, let it cool down and enjoy lukewarm.

Step 7

Tip: The leftover dough can be stored in the refrigerator for further use (e.g. for baking small rolls or a small pizza).
