Ingredients

For the cookies

  • 2 medium ripe bananas
  • 80g peanut butter
  • 3 tsp coconut oil, liquid
  • 3 tsp yacon syrup
  • 1 tsp vanilla extract
  • 1 tsp crystal salt
  • 100g almond flour
  • 150 g oat flakes, gluten-free
  • 60g hazelnuts – chop
  • 50 g dark chocolate, vegan – chop

Instructions

These gluten-free and vegan cookies taste great! Vegan chocolate pieces, crunchy hazelnuts, oat flakes and bananas provide the perfect biscuit feeling.

Step 1

Preheat the oven to 160°C fan oven; Prepare a baking sheet lined with parchment paper.

Step 2

In the meantime prepare the ingredients.

Step 3

Roughly chop the bananas over a bowl and mash with a fork until smooth.

Then add 80 g peanut butter , 3 tbsp liquid coconut oil, 3 tsp yacon syrup, 1 tsp vanilla and a pinch of salt and stir vigorously with a whisk.

Step 4

Sieve 100 g almond flour over the dough, add 150 g oat flakes and fold into the mixture.

Then sprinkle with the chopped hazelnuts and chopped chocolate and mix well.

Step 5

Place a tablespoon of dough on the baking paper for each cookie, flatten with a spoon and bake on the middle shelf for 15 – 17 minutes.

Step 6

Place the finished vegan cookies on a baking rack and allow to cool.
