Ingredients

For the broccoli spinach soup

  • 50 g celery
  • 1 teaspoon ginger
  • 400 g broccoli
  • 200 g young spinach
  • 2 tablespoons peanut oil, heat-resistant
  • 20 g cashews
  • 500 ml of water
  • 2 tablespoons pumpkin seeds
  • 10 g fresh parsley
  • 250 ml coconut milk
  • 1 tbsp tamari (soy sauce)
  • 2 tablespoons of yeast flakes
  • 1 hand blender
  • crystal salt and pepper from the mill

Instructions

Broccoli spinach soup is a delicious and healthy meal made with broccoli, spinach, onion, garlic, vegetable stock and spices. It is rich in nutrients and easy to prepare.

Step 1

Cut the celery into thin rings; grate 1 teaspoon of ginger;

Cut the broccoli into small florets and roughly dice the stalk;

Wash the  spinach and spin dry.

Step 2

Heat a pan with 2 tablespoons of peanut oil and fry 20 g of cashews with the celery rings and grated ginger for about 3 minutes.

Deglaze with 500 ml of water, bring to the boil and simmer with the broccoli for 5 minutes.

In the meantime, roast 2 tablespoons of pumpkin seeds without fat; finely chop 10 g of parsley.

Step 3

Stir 250 ml coconut milk into the pan, then add the spinach1 tbsp tamari and 2 tbsp yeast flakes, bring to the boil again and remove from the heat. 

Puree finely with a hand blender; season with salt and pepper.

Pour the broccoli and spinach soup into a soup bowl, garnish with the roasted pumpkin seeds and serve sprinkled with chopped parsley.
