Ingredients

For the cabbage soup

  • 1.5 kg white cabbage – remove the stalk and cut into 1 cm strips
  • 500 g tomatoes – remove the stalk and cut into 1 cm cubes
  • 300 g celery – pull the threads and cut into 1 cm pieces
  • 300 g carrots – peel and cut into 1 cm slices
  • 250 g mushrooms – clean and quarter
  • 6 spring onions – cut the white and green part separately into rings
  • 3 cloves of garlic – press
  • 1.5 liters of vegetable stock
  • 1 bay leaf
  • Crystal salt and pepper from the mill
  • 4 tbsp chopped parsley

Instructions

The cabbage soup is known as a fat burner, a lightning diet for quick weight loss.

Step 1

For the cabbage soup, put all the ingredients – except for the parsley and the green of the spring onions – in a large saucepan and bring to the boil; lightly salt.

Step 2

Reduce the heat and let the soup simmer gently for about 1 hour. Then remove the bay leaf, fold in the spring onion greens and season with salt and pepper.

Step 3

Serve the cabbage soup and sprinkle with 4 tablespoons of chopped parsley to enjoy.

Note: This recipe makes about 2.3 kg of soup; that’s about 10 servings.
