Ingredients

For the parsnip-apple lamb’s lettuce

  • 200 g lamb’s lettuce – wash and dry
  • 200 g carrots – peel and grate coarsely
  • 200 g parsnips – peel and coarsely grate
  • 150 g grapefruit – use a sharp knife to cut off the peel along the curve, including the white skin, then fillet
  • 40 g cashews – briefly roast in a fat-free pan

For the dressing

  • 150 g apple, sweet and sour – wash, peel, halve, core and grate coarsely
  • 60 ml grapefruit juice, freshly squeezed
  • 15 ml lemon juice, freshly squeezed
  • 3 tablespoons olive oil, cold-pressed
  • 1 tbsp yacon syrup (optional)
  • crystal salt and pepper from the mill

Instructions

This refreshing, fruity parsnip and apple lamb’s lettuce tastes excellent. It also provides your body with valuable bitter and vital substances.

Step 1

Mix all the ingredients for the dressing in a bowl. Then fold in the carrots and parsnips and season with salt, pepper and yacon if desired.

Step 2

Arrange the lamb’s lettuce on three plates, drizzle with the dressing and garnish with the grapefruit fillets.

Step 3

Serve the parsnip-apple lamb’s lettuce sprinkled with cashew nuts.

Tip: Alternatively, you can of course simply arrange the salad in a salad bowl and serve it.
