Ingredients

For the almond yogurt

  • 800 ml filtered water (alternatively still water from a glass bottle)
  • 200g peeled almonds – soak overnight*
  • 1 packet (25 g) plant-based organic yoghurt ferment
  • 1 nut milk bag (alternatively 1 straining cloth)
  • 2 preserving jars of 500 ml each

*This means that the nutrients and vital substances contained can be absorbed more easily and the digestive system is relieved at the same time.

Instructions

To make this delicious almond yoghurt yourself, you only need three ingredients: water, almonds and probiotic yoghurt cultures. Our recipe is healthy, delicious and ready in 10 minutes.

Step 1

Drain the soaking water from the almonds and rinse again in a sieve.

Then add to a high-performance blender together with 800 ml of water and mix vigorously for a few minutes.

Step 2

Prepare a bowl with a sieve, put the nut milk bag or straining cloth in it and strain the almond milk.

Squeeze out all the liquid vigorously; the leftover pomace can be used for baking or muesli.

Step 3

Stir the yoghurt ferment into the drink until all the powder has dissolved.

Then pour the drink into the glasses; leave at least 2 cm free at the top edge.

Close the jars and place in a warm place for approx. 12 – 24 hours.

Depending on the temperature (e.g. in the kitchen or on the radiator), the fermentation time may vary.

So let it stand until the whey has settled at the bottom and a solid mass is floating on top.

Step 4

Then carefully hold the mass with a spoon and pour the whey into a container. (The whey can be drunk or used in smoothies, shakes or dressings).

Step 5

Put the solid mass in a bowl and stir with a whisk to a creamy yoghurt.

Step 6

Pour the yoghurt back into a mason jar and refrigerate again. This makes it a little firmer and slows down the fermentation process.

Step 7

The yoghurt should be consumed within a few days.

Step 8

Tip: If required, the yoghurt can be flavoured with fruit, yacon syrup, agave syrup, vanilla powder, cardamom, etc. – depending on the intended use.

Step 9

The whey can also be flavoured with all sorts of fruits. In this way, you get a delicious whey drink with health-promoting bacterial strains.

Step 10

You can of course also use other seeds or nuts, such as cashew, macadamia etc. to produce a delicious yoghurt.
