Ingredients

For the Brussels sprouts salad

  • Cut 500 g Brussels sprouts stalk, remove the outer leaves and cut in half
  • 4 tbsp olive oil, cold-pressed
  • 4 tbsp apple cider vinegar
  • 2 tbsp mustard, coarse-grained
  • 2 tbsp yacon syrup
  • Crystal salt and pepper from the mill

Instructions

This crunchy Brussels sprouts salad tastes pleasantly fresh and light. Since it is not bitter, it could also be enjoyed by those people who normally do not like Brussels sprouts.

Step 1

For the Brussels sprouts salad, bring a saucepan of water to the boil, season with salt and simmer the Brussels sprouts for about 5 minutes so that they still have a pleasant bite.

Then pour over a sieve, rinse with cold water and allow to drain.

Step 2

For the dressing, mix vinegar, mustard, yacon syrup and a little salt and pepper in a bowl; then slowly stir in the olive oil.

Step 3

Then add the Brussels sprouts, mix everything well and season with salt and pepper.

Step 4

Let the Brussels sprouts sit for about 15 minutes before serving.
