Ingredients

For the chickpea spread

  • 150 g chickpeas (net) – rinse over a sieve and drain
  • 50 g artichoke hearts, preserved in their own juice – drain
  • 50 g mayonnaise, vegan – (make it yourself)
  • 1 spring onion – cut the white part into fine rings (use the green part for something else)
  • 8 slices of GF whole meal bread

Other ingredients and spices

  • 1 tbsp tamari (soy sauce)
  • 1 tsp lemon juice, freshly squeezed
  • 1 tbsp capers
  • 2 tbsp finely chopped parsley
  • some cress – for decoration
  • Crystal salt and pepper from the mill

Instructions

This spread made from chickpeas and artichokes has a very pleasant texture. In addition, it is balanced, mildly spicy and fresh in taste. Be sure to try it as it only takes 15 minutes to make.

Step 1

For the spread, place the chickpeas and artichokes in a tall bowl.

Puree briefly with a hand blender so that a light structure is retained.

Step 2

Then stir in the mayonnaise, tamari and lemon juice; season with salt and pepper.

Step 3

Spread the chickpea spread on the bread slices and garnish with spring onions, capers, parsley and cress.
