Ingredients

For the cucumber cold soup

  • 400 g organic cucumber – cut 20 g into 0.5 cm cubes; cut the rest into large pieces
  • 200 g soy yogurt
  • 10 g red onion – peel and roughly chop

Other ingredients and spices

  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon olive oil, cold-pressed
  • 1 g garlic – (optional) peel
  • 1 tbsp finely chopped dill + some for garnish
  • crystal salt and pepper from the mill

Instructions

This cold cucumber soup is the perfect refreshment on hot summer days! It’s also low in calories, healthy and can be prepared in just 10 minutes. So, you should definitely try it.

Prepare the ingredients.

Step 2

For the cucumber soup, mix all ingredients – except the cucumber cubes, olive oil, dill, salt and pepper – in a blender for about 1 minute until smooth; while doing this, slowly drizzle in 1 tablespoon of olive oil. Then fold in the chopped dill and season with salt and pepper.

Mix the cold soup again briefly, pour it into a bowl, spread the cucumber cubes on top and place in the fridge.

Step 3

Once the soup is sufficiently cooled, take it out of the fridge and enjoy garnished with some dill.

Tip: In summer, you can enjoy the cucumber soup ice cold, because that’s how it tastes best at high temperatures.
