Ingredients

For the bars

  • 160g oatmeal, fine
  • 3 Medjool dates, pitted
  • 1/2 teaspoon crystal salt

For the filling

  • 140g cashews
  • 30g cocoa powder
  • 10g coconut oil
  • 30g date syrup
  • 1 tbsp. vanilla powder
  • 3 – 4 tablespoons water

Instructions

These raw oatmeal bars with a creamy filling of cocoa and cashews are prepared in no time, do not require conventional sugar, and still taste pleasantly sweet!

Step 1

For the bars, mix 160g oatmeal with 3 dates and 1/2 teaspoon salt in a blender or cutter until medium-coarse.

Pour the mixture into a bowl and set aside.

For the filling, chop 140g cashews as finely as possible and puree with 30g cocoa, 10g coconut oil, 30g date sweetener, 1tbsp. vanilla powder and, depending on the size of the blender jar, with 3 – 4 tablespoons of water to a smooth, homogeneous mass.

Then add 2 tablespoons of the mixture to the oatmeal in the bowl and mix well.

Step 2

Place the oatmeal mixture on baking paper, place a second baking paper on top and roll out with a rolling pin into a rectangle 1cm high.

Then brush half of the rectangle with the filling and put it in the fridge for 1 hour.

Then cut the rectangle in half and close it with the unfilled side.

Then cut into 14 equal bars.

Arrange the oatmeal bars well chilled and enjoy.

It is recommended to refrigerate it for approximately one week.

Tip:

Excellent as a snack between meals or for breakfast with fresh fruit.

Half of the oatmeal can also be replaced with buckwheat grains.
