Ingredients

For the raw vegetable salad

  • 160 g pear – wash and coarsely grate
  • 130 g apple – wash and grate coarsely
  • 100 g broccoli – wash and cut into small florets
  • 2 tablespoons slivers of almonds
  • 70 g soy yoghurt
  • 35 g sour cream, vegan
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tbsp olive oil, cold-pressed
  • 1 tsp yacon syrup
  • 1 pinch of cinnamon powder
  • Crystal salt and pepper from the mill

Instructions

For this raw vegetable salad, we coarsely grated the fruit, combined it with broccoli florets and almond sticks and provided it with a refreshing, finely seasoned dressing. Very easy, quick to prepare and very tasty.

Step 1

For the raw vegetable salad, put the grated fruit in a bowl, sprinkle with lemon juice and mix.

Step 2

Then add all the other ingredients – except the slivers of almonds – mix thoroughly and season with salt and pepper.

Step 3

Arrange the raw vegetable salad on two plates and enjoy sprinkled with the slivers of almonds.
