Ingredients

For the red cabbage salad

  • 400 g red cabbage – remove the stalk and cut into very fine strips
  • 50 g figs, dried – cut into fine strips
  • 2 tbsp pecans – chop
  • 2 tbsp chopped parsley

For the dressing

  • 6 tbsp water
  • 4 tbsp lemon juice, freshly squeezed
  • 3 tbsp olive oil, cold-pressed
  • 2 tbsp yacon syrup
  • 2 tbsp almond butter, white
  • 2 teaspoons horseradish, from the jar
  • 2 teaspoons of Dijon mustard
  • Crystal salt and pepper from the mill

Instructions

For this raw vegetable salad, we combined the red cabbage with figs and pecans and added a spicy, creamy dressing – very tasty!

Step 1

Mix all ingredients for the dressing in a salad bowl.

Step 2

Add the red cabbage and figs and gently massage the dressing in with your hands.

Then let it steep for about 15 minutes;

then season with salt and pepper.

Step 3

Serve the red cabbage salad sprinkled with pecans and parsley.
