Ingredients

For the spinach and artichokes:

  • 300 g leaf spinach, fresh (old 150 g frozen)
  • 280 g artichokes, jarred (net)
  • 100 g red onions
  • 1 clove of garlic
  • 1 tsp capers
  • 2 tbsp almonds, peeled
  • 1/2 tsp thyme, chopped
  • Olive oil, heat-resistant
  • 1 pinch of chili flakes
  • 1 1/2 tbsp balsamic vinegar bianco
  • 1/2 tsp lemon zest
  • Crystal salt and pepper from the mill

Instructions

For this Mediterranean dish, artichokes are sautéed with spinach, garlic and onions and seasoned with capers, chili and lemon – deliciously spicy and refreshing!

Step 1

If needed, ensure the spinach is fully thawed, then drain the artichokes in a sieve.

Halve the onions and slice them into strips, while thinly slicing the garlic.

Finely chop the capers and thyme.

Lastly, chop the almonds and toast them without any added fat.

Step 2

Heat a pan with a little olive oil to medium heat and fry the drained artichokes for 2 minutes.

Then fry the onion strips, garlic slices and spinach leaves for 2 mins.

Place the contents of the pan in a bowl and then add the chopped capers, 1 pinch of chilli flakes, 1 1/2 tablespoons balsamic vinegar bianco, 1/2 tsp lemon zest and the chopped thyme.

Top it off with salt and pepper, arrange and serve topped with the roasted almonds.
